Was the vent line capped off? Hopefully it was just the cooling coil in the cover so yes you could just cap of the ends going to the cooler and connect the two coolant lines together. This can also happen in the transfer case as well as other coil coolers and is commonly called a vampire leak...

As long as you are showing pressure when running you should be good to go. These gauges are notorious for their bounce and inaccurate pressure readings. When running mine could be at 90psi or 30psi with a lot of bounce.

You have to see just what shape the cylinder walls are after you clean them. Is the engine frozen? Hopefully the rings are not frozen in place. Not sure if those cylinder walls are OK.

I always had a saftey concern removing the run flats with the 37s. If cruising down the road and having a blowout without the run flats that wheel is going to abruptly drop over eight inches. That is a tad concerning.

Unless you had a stuck float or a needle and seat issue with the carb there is no way to dump enough gas into the oil to be noticeable. Any gas in the oil will go away as soon as the engine reaches temperature. I know I am dating myself but gasoline was once used to cut the old stright weight...
Are you saying you don't have a rear bracket for the starter. That is a buttload of weight to be cantilevered out supported only by two starter bolts. Like I just read about the Space X test vehicle's explosion today.
