Age doesn’t matter in Texas for FMV registration.
My M1097R1 with a 3 speed transmission is titled as a 2006. It is also registered as a FMV, which is a subcategory of the antique registration.

As @Mogman said, you can elect to use your bumper number in lieu of a license plate when your vehicle is registered as a FMV in Texas.
