I always check my lights before I go for a drive, brake lights working, but after driving and using the brakes they stop working

If it is still using the airpack brake fluid switch it maybe that the switch has gone bad.
Just short the two wires on the switch and see if the lights come on.
If it is bad I would switch over to a air side switch. There are some tread here on SS about doing that.

That's because you take your foot off the pedal. You can't have your foot on the pedal and look at the back of the truck at the same time.
