Temp Sender on Gas Deuce

Temp gauge in gas deuce quit. Stuck in a new gauge I had on hand. Made sure it has good ground. Still nada.
Any body know how to test a temp sender? You know, like what should the resistance be at a particular water temperature or something?
I could just buy a sender I suppose, but I want to know "why".
