I recently purchased am M35A3 ...I am new to this style of trucks ,but not large trucks in general.I drive trucks that have air brake systems. The system on this truck has a soft feel to it(deep depression before they engage) is this common for this type of truck/system?

Yes I was told once the air pressure builds to 90/100+ pounds ,the air assist will help in stearing ..put I am not familiar with air/hydraulic systems...breaks....since this is my first deuce.Any advice on how to remedy the "soft" feel?Could this be a simple fix such as just replacing the break pads?

I break air at about 30 psi cause I'm so old. As for my truck, I have air over hydraulic brakes that occasionally break but that the breaks.

The soft feel could be it needs bleeding or the brakes need adjusting or possibly more extensive brake service .
