I drove the wheels off one in Korea (Command Version, I was th BN CMDRS driver)...didn't like them then and time has not mellowed my opinion.

Island.......when yo get to Macon, GA take I-16 east and hit Hwy 129 north to Eatonton...then hit Hwy 44 north....it will take you to Greensboro....cuts off a lot of miles......it's two lane but not as unnerving as having Peterbuilts blowing by you at 80 MPH on the interstate.
If you need another reason not to cut them remember this.......loading and unloading carge is already a backbreaking process in a covered deuce. Also the troops seats would be unusable because they are set for the height of the cargo cover......anybody riding on them would have to ride bent over...

We try to provide decent meals with the military flavor thrown in (Chili-mac and SOS are standard Army fare).

Designed to move armament and equipment, the M-818 was a beast in towing. The load allowance following manufacturer limits was 37,500 lbs. The payload on the truck itself allowed 15,000 lbs. They could not pull civy trailers unless modified to do so.

Since you are building it from scratch you might consider making it less wind resistant (I know it's going on a vehicle with the aerodynamics of a cement block but every little bit helps).
Having owned both (and driven the wheels off them in the Army) I can tell you that the 800 series is louder and rides rougher than a deuce....it is also bigger, sucks fuel and cost more to operate than a deuce.
Some states require a CDL for an 800 series even though it does not have straight...
