I wouldn't give up air brakes at all. If you haven't picked a donor yet, I'd try to find air brake system or one that can easily be adapted to use them. Obviously that'll preclude 2.5T axles and leave you in 5T+ area. The EASIEST would be axles from an M916/17/20.
