I can't seem to find a definitive answer on this. Some say 3500 rpm, others say 3600 rpm etc... I did the 4L80e 4 speed swap and I'm trying to set my shift points (Quick 4 TCM after market controller) so I'm maximizing what limited power I have. What is the redline difference between the 6.2 and the 6.5?

Hypothetically, if redline is "3500 rpm" could I set my shift points at 3500 rpm at 100% throttle? What's reasonable?

It's more dependent on the IP. It will start defueling around 3400. You could probably twist one out to 3500-3600. I would not set your shift point to the governed speed, but slightly below it.

BTW, you should have 2.56 diffs in the truck. A2's and later got the 2.73 and 3.08 diffs. So your effective axle ratio is 5.06. I really would like to drop a 4L80e in mine too.

Do you think it'd be OK if I set my shift points at 3300 or 3350 pm at 100% throttle? I thought I read that the 6.5na had a slightly higher rpm range than the 6.2na?

Yes I'd put it below governed high idle like that. It'll prevent slow shifts or hanging if it can't reach that 3400rpm if it's burdened.
