No, they stick closed. The axle housing builds pressure, simply by becoming warm in operation, ambient temperature etc. and then gear lube is forced out through whatever gives way first - usually an axle seal.

Amen to that. I cringe when people brag how much punishment and abuse these trucks can take, or see Deuces submerged in mud and water. What could possibly keep a Deuce healthier than milky gunk in the drive train and hubs?

Alternator: depends; if you have shop in your area that can do it, ask for a quote. Also consider replacing stock alternator with a modern type alternator, maybe even go dual 24/12V. Do a search - ready made brackets available for both options. TM America on this site makes bracket kits to bolt...
5 tons have a 3/8 cable, 21/2 tons a 1/2 inch. Not sure if you can make that fit safely.

If you have never operated the winch before, my recommendation would be to check the winch over, before you do anything else.
1) drum lock - engage/disengage
2) winch clutch - engage-disengage; does the flip lock work?
3) can you pull wire off; does the winch drum freespool?
4) open the fill...
