If the truck is fine in _all other ways_ except both batteries then pull starting is not a problem. You can pull start a deuce in less than 60 feet. If one battery works just jump it with your truck. Of course fabing a fixed width towbar out of square tubing and a trailer hitch is cheap, easy...
The first question you should ask yourself is what voltage are you going to use. 12VDC is good if it will be attached to a SUV. 24VDC is ideal for use with a MV or a 24V genset. Go with 120VAC if you plan on using a generator.
As for mounting your accessories consider the virtues of 3m's VHB...

You could put the jeep in neutral, rev up the deuce and pop the clutch. If you're fast the jeep will land on all four wheels. Like the table cloth trick. rofl rofl
