I would cut it in the straight section and then bolt it to the truck on both ends and mark what needs to come out. Cut that out and remount it on the truck and at least tack weld it in several places so you know for sure it will fit when fully welded.

I like the idea of the stock tire setup. Unlike the super singles if you get one flat in the rear you are not dead in the water. Also not trying to carry one monster spare. You have four built in spares if it comes down to it. That is one well thought out rig, well done.
