How it looks on the picture the rims are not original.
Maybe they are wider than 6.5......
I think the tire size is 265/75/16 or 285/75/16.
Tires on my Truck are 255/85/16
2" lift in the rear (blocks).

The fact that it takes 30 or more minutes to Start the engine again sounds to me something must relieve pressure or some solenoid or sensor must cool down.
Maybe there is not enough air and it dies.

The new 6.5 was a civi model ?
You use the old intake manifold from the 6.2 or from the 6.5 ?

The angle of your pictures are not so good.
Try to take pictures that the lens has the same level as the leaf springs.
So as the leaf springs now appear on your pictures I would say they are done.
I've tested the old Iron today.....for a few miles, I had almost 85 mph on it!!!
The tires are 33", the rest is stock.......
The acceleration goes up to 85 mph very fast.
