Just to elaborate, in Zarathustra's case what is happening is the relief valve is stuck closed, causing oil pressure to go too high.
This pumps up the lifters to the max and floats the valves causing a loss of compression and then the motor dies.

Another helpful trick is to drill a 1/8" air bleed hole through the flat section of the thermostat. Some better brands come with a hole already there with a little loose fit captive pin that will seal it once pressure builds.
This allows the air to pass through when filling, but 1/8" is small...

If you aren't too hung up on stainless, I had grabbed zinc plated serrated flange head bolts 10-32 x 5/8" for about $10 per 100 and also got serrated flange nuts for $8 / 100 on ebay.

Running it without a thermostat could very likely be the cause of the overheating. It may seem contradictory, but without the thermostat to regulate the flow, water will circulate too fast and not transfer its heat properly.

Agreed... that noise sounds like insufficient voltage to keep the preheat solenoid closed and also insufficient to close the start relay.
If you have a volt meter, check the battery voltages, but I bet at least 1 of them is bad.

If you have access to a lathe, what I did was make a dummy injector body that is actually a compression gage adapter.
Remove injector, install the adapter in it's place and the adapter accepts the compression gage.

You are correct, I mis-read where you took the intake hose off. I didn't realize it was off the intake not air cleaner, so yes.... you have eliminated the turbo from the equation. Your thinking about the injectors just dumping fuel is a definite possibility. Unfortunately I'm not experienced...
