On deuces years don't particulary matter, they are all basically the same. You can have a 1960's deuce that is in better condition than one from the late 70's / 80 just depends on how the government took care of it. You usually want a deuce with a multifuel + turbo so it doesn't belch black...
I personally wouldn't use starting fluid, ether is a bit strong. I had problems getting my deuce to start the other day after a filter change. I put a little gasoline in the mushroom to assist in the starting process. The fumes are strong enough to help crank the engine.

How thick is the lunette ring on the M105A2? I know average ring at Tractor supply wont fit on the deuce because the deuce needs a 3 inch hole, but will the pintles they have there hold a military ring, or is the ring too thick?
