OK, so you replied while I was still typing. So you can add it to the trailer, or you can simply use sheet metal screws (or Id probably bolt that receptacle panel in place) right on the side of the generator itself. That will then allow you to snake wire from the box, down and into the machine...

The liquid level sensor is the culprit. It has internal contacts, and a float which engages/disengages them. These can become inoperable, telling the set that its empty when its not... or the reverse, only half working (the lower limit) and as the fuel level rises, the shut off top doesn't...
Its a great feature... but not one to be blatantly ignored. They work great (until they don't, and the entire volume of your external tank has been pumped in and subsequently pumped out of the day tank on the genset... it happens).
And since you are already messing around, I would personally swap the thermostat with a new one, when you are all done flushing, and are at the final fill stage.
I would run it a few times with just regular tap water from a hose. Then after a couple runs, put with distilled and get up to temp, drain that... and move to HD coolant of your choice.
I don't know when they made the vendor change, but like you have said a few times, thats an irrelevant figure. This one was dusty in the rear of the control box, so certainly with the liberal washing it got... I hope the next owner will be problem free. She tested fine.

Does anyone have a simple wire schematic for the S8 that is cleaned up? What seems more likely here... something is miswired on the S8, or that the S8 might be faulty?

I don't pull permits, as a general rule. With that said... it seems the least annoying way to do this would probably to have a locking receptacle put on the side of a structure (as already said), and just use a cord with locking connector on it. Even if you intend on the set being stationary...
