As an added insult, the Chinese manufactured HH have an improved button and clip that are beefier, better made and seem much less prone to falling off.
I learned that the hard way when I switched over to the new rims and tires. Let's just say, when you have the choice between a small pail of tire soap/goop and an insanely big pail of tire soap/goop, buy the insanely big one!

Depending on the clarity of your injector return lines, can you see air bubbles with the engine running? While I recommend following the decision trees in the manual, methinks air leaking into the fuel system is high on the list. Once fuel flow picks up at higher rpm the injection pump can...
As for easy things to check:
- sticky fuel shutoff at the injection pump. If it is fully stuck, engine won't start but if it hangs up a little, it may cut enough fuel to not let it idle properly. That is the lever behind the small lid on the side of the IP.

My only consideration would be whether you do a lot of tight forest trails. Then the older elephant ear mirrors are easy to fold in. The West Coast not so much and you whack the crappola out of them. Otherwise, West Coast wins for all the mentioned reasons.

The air pop off sound that you hear after shutdown (usually some 5-15 mins after) is the air pressure regulator valve ("the air governor"). Normal and one of my favourite sounds the truck makes.
The idle speed is adjustable. Being a fuel truck, I do not know if it has a throttle in the rear that might be partially pulled. Better check that.

There is a big black blob on the top of the differential. I looked at it again and I cannot actually tell if it is oil. Maybe paint? Maybe just road gunk? Anyway...have a look. Might be nothing.
Doing the seal there takes about 15 mins...
I like that you kept the boxed in front bumper. It is a useful upgrade and looks sharp. Is it just a step or did they put storage into it? If not, that would be a cool project; two shallow boxes with a lid for the chains, shackles and recovery straps!

The pics really do not show anything of concern. The rearmost pinion seal looks like it is leaking a bit. The chassis is super clean and rust free, as you said.
