Height isn't a big issue on a trailer as you describe. Just about any 16 light truck tire will work. Check the other threads at the bottom of this thread for additional info.

Operationally, you should be fine. It will look odd, subject stuff and folks in the bed to burns (unless running them out the hood) and collect rain water but it is your truck.
