Removing the bed is a good idea. Gets the weight lower, less wind resistance, and easier to climb in/out of the camper. Plus you can more easily mount your water tanks/batteries into the trailer subframe, so the weight is as low as possible while not compromising offroad capability.

809 series has single circuit air assisted hydraulic brakes like the deuce, and the same style parking brake on the back of the transfercase. They don't seem to be as prone to brake issues as the deuce but you need to keep an eye on them.
Everything else is bigger/heavier. The m809 series has a long nose compared to the m35a2 and the nhc250 is a challenge to start in the cold without a block heater.

Same shift pattern. Noise is much lower pitch than the multifuel engine (deep rumble). With the muffler it is quieter

Yep, keep the EGT down and the lack of piston squirters is of no issue with adding a turbo. Just don't crank it up around 350+HP or those temps will be too high and melt the pistons

At my last job one of the trucks I worked on was an older peterbilt with the nhc250 and turbo (altitude kit from Cummins). No piston squirters. Not a 290 or any of the others from the series, a NHC250. Rolled over 1.1 million miles with no major engine work then the customer decided to have it...
