As pointed out in this thread, there are two basic ways to use the can for engine running. Cut a hole for the starter or move the rear cross member back. I moved mine back and just put in longer bolts with some nuts as spacers. Either way works great.
A few things I have learned that might help others.

As I'm sure you two know. The brake like power comes from the 3 lever and then goes back. I have had several 3 levers that don't work on that circuit. Try connecting the leads at the brake switch before you condemn the switch.
What kind of truck?
M1009 I would check the shoe adjustment, rear brake hose, proportioning valve under the radiator and the rear wheel cylinders for not being stuck or frozen up.
M1008, M1028, M1010 or M1031 I would suggest the above plus the load sensing valve under the bed.

The ones I have done required about 30-45 seconds total of cranking. I would crank 5 seconds or so, let it sit for a few minutes and repeat.
I really do think your on/off solenoid might be not working correctly though based on what you have written.
Put a rubber glove over the lid of the paint gun cup. Hold a rag over the nozzle and pull the trigger. That will inflate the glove, mix the paint and give you a good indication of how much paint you have used as the glove deflates as you go. No paint will drip out either.
